Strongbox can (and by default does) create backups of your databases everytime a change is made. These are rolling backups so Strongbox keeps the last 10 (configurable) versions of your database just in case. These are stored on your Mac here:
~/Library/Group Containers/group.strongbox.mac.mcguill/backups
